Thai Green Curry Puff Pastry Bakes

Ingredients

  • 1 tin Grant’s Thai Green Curry

  • 1 packet microwavable rice

  • 1 pack pre-rolled puff pastry

  • 1 egg

  • Handful of fresh coriander

Method

  1. Preheat the oven to 180°C (fan 160°C / gas mark 4) and remove the puff pastry from the fridge to come to room temperature slightly.

  2. In a large bowl, mix together the tin of Thai green curry and the packet of rice. Combine well.

  3. Roll out the puff pastry (if needed) and slice into 8 equal rectangles.

  4. Take one rectangle and spoon roughly 3 tablespoons of the curry and rice mixture into the centre, leaving a small border around the edges.

  5. Place another rectangle of pastry on top and seal the edges with a fork. Score a couple of lines on the top.

  6. Repeat until you have 4 pastry bakes.

  7. Whisk the egg and brush (egg wash) all over the tops of the pastries.

  8. Place the 4 bakes onto a lined baking tray (greaseproof paper) and bake for about 30 minutes, until puffed up and golden.

  9. Garnish with fresh coriander before serving.
