Pulled Pork Loaded Fries

Ingredients

400g skinny fries

1 tin pulled pork

½ small red onion, finely sliced

100g mozzarella, grated

BBQ sauce, to taste

Mayonnaise, to taste

Fresh chives, sliced, for garnish
Instructions

Preheat the oven to the temperature indicated on the fries packaging.

Cook the fries: Spread the fries on a baking tray and cook in the oven for 5 minutes less than the packet suggests (so they stay extra crispy).

Add toppings: Remove fries from the oven. Scatter pulled pork evenly over the fries, followed by grated mozzarella and finely sliced red onion.

Bake loaded fries: Return the tray to the oven for 10 minutes, or until the cheese is melted and bubbly.

Serve: Drizzle with BBQ sauce and mayonnaise, then sprinkle with fresh sliced chives. Serve immediately.
