Marry Me Chicken Pasta

Ingredients (Serves 2):

1 tin of Grants Chicken in White Sauce
1 white onion, finely diced
2 garlic cloves, grated
2 tbsp sundried tomato butter or olive oil
Handful of cherry tomatoes, chopped
2 portions spaghetti
1 tbsp tomato puree
Handful of spinach leaves
Fresh basil leaves
½ cup grated Italian cheese

Method:

Cook the spaghetti according to packet instructions, reserving a little pasta water before draining.

Meanwhile, heat the butter or oil in a large pan and sauté the onion for 10 minutes until softened. Add the garlic and cook for 5 minutes more. Stir in the tomato puree and cook for 2 minutes before adding the cherry tomatoes and Grants Chicken in White Sauce.

Stir through the spinach and basil leaves, then simmer for 10 minutes. Add the grated cheese and stir until melted and creamy. Toss through the cooked pasta with a splash of pasta water until fully coated.
