Instagram Sensation Scrimpy Scottie Haggis Mac and Cheese

Ingredients:

  • 400g macaroni pasta
  • 50g salted butter
  • 50g plain flour
  • 800–1000ml milk
  • 200g cheddar cheese, grated
  • 1 tin of Grant’s Haggis
  • Spring onions, chopped, to garnish

Method:

  1. Cook the Pasta:
    Cook the macaroni according to the packet instructions. Drain and set aside.
  2. Make the Cheese Sauce:
    • Melt the butter in a large saucepan over medium heat.
    • Add the flour and stir continuously for 1–2 minutes to cook the roux.
    • Gradually whisk in the milk, a little at a time, until smooth and thickened to a sauce consistency.
    • Add the grated cheddar and stir until melted and fully combined.
  1. Assemble:
    Preheat the oven to 180°C (fan 160°C / gas mark 4).
    Mix the cheese sauce through the cooked pasta, then pour into a buttered oven dish.
  2. Add the Haggis:
    Break up the haggis in a bowl and crumble it evenly over the top of the macaroni cheese.
  3. Bake:
    Place in the oven for about 15 minutes, or until bubbling hot and the haggis is cooked through.
  4. Serve:
    Garnish with chopped spring onions and a sprinkle of extra cheese if you fancy. Serve hot and enjoy!
