Instagram Sensation Scrimpy Scottie Baked Lasagna Potatoes

Cheesy Bolognese Baked Potatoes

Ingredients

Baked potatoes:

4 x baked potatoes

1 tin Grants Beef Bolognese

Extra grated cheese

Knob of butter for each potato

Cheese sauce:

50g butter

50g flour

500ml milk

Salt to season

100g grated cheddar, extra for cheesy topping

Instructions

Make the cheese sauce: Melt the butter in a saucepan and add the flour. Cook the roux for a couple of minutes. Gradually pour in the milk, whisking continuously for about 5 minutes until thickened and smooth. Season with salt and whisk in the grated cheese until fully combined. Remove from the heat and set aside.

Prepare the potatoes: Preheat the oven to 180°C. Place the baked potatoes in an ovenproof dish so they fit snugly together. Slice open each potato like you normally would and add a knob of butter to the centre.

Add the filling: Evenly distribute the Grants Beef Bolognese between the four potatoes. Sprinkle extra grated cheese on top.

Assemble the dish: Pour the cheese sauce over the potatoes so they are well covered. Add more grated cheese on top if you like.

Bake the potatoes: Place in the oven for 30 minutes, or until the topping is golden and bubbling.

Serve: Serve one baked potato per portion with a side salad.
